How to Make Blueberry Tarts Using Frozen Tart Shells

Updated: Jul 5

Berries in the fridge. Frozen tart shells in the back of the freezer. A sunny afternoon calling for something sweet but simple.

If that’s your summer vibe—you’re in for a treat.

At Windberry Farms, our certified organic blueberries aren’t just great for picking. They’re even better when you turn them into buttery, juicy, no-fuss tarts.

Here’s how to make blueberry tarts with frozen tart shells—and why they’re the perfect summer dessert for families, dinner guests, or solo indulgence.

Why Are Blueberry Tarts the Perfect Way to Use Frozen Tart Shells?

Because they let you skip the fuss and keep all the flavour.

Frozen tart shells mean no rolling pins, no chilling, and no mess. Just pop them into the oven while your filling simmers—then spoon, cool, and enjoy.

The result? A rustic, just-sweet-enough dessert that tastes like you spent hours on it (you didn’t).

What Makes Windberry Blueberries So Good in Tarts?

They’re certified organic, hand-picked, and packed with natural flavour—not water.

That means they hold their shape, burst with juice, and shine with every bite. You don’t need much sugar to make them sing—and they pair beautifully with a buttery crust, lemon zest, or even a scoop of ice cream.

What’s the Easiest Recipe for Blueberry Tarts with Frozen Shells?

Here’s a farm-favourite recipe made with frozen tart shells and fresh or frozen berries:

Ingredients:

  • 1 dozen frozen tart shells

  • 3 cups fresh or frozen blueberries

  • ½ cup sugar

  • 2 tbsp cornstarch

  • Pinch of salt

  • 2 tbsp lemon juice

Instructions:

  1. Preheat oven to 375°F. Bake tart shells on a sheet for 10–12 minutes until golden.

  2. Meanwhile, simmer half the blueberries with sugar, cornstarch, lemon juice, and salt. Stir until thickened.

  3. Fold in remaining berries. Let cool slightly.

  4. Spoon filling into tart shells. Chill or serve warm. Add cream or ice cream if you’re feeling fancy.

Can You Make These Ahead or Freeze Them?

Yes—and that’s why we love them.

These tarts keep beautifully in the fridge and taste just as good (if not better) the next day. Want to freeze a batch? Do it before baking, then warm them in the oven for 15–20 minutes to serve.

Perfect for family dinners, brunches, or spontaneous blueberry cravings.

What’s the Best Way to Serve These Tarts?

Straight up. Or with…

  • Vanilla ice cream

  • Lemon curd

  • Whipped cream

  • A drizzle of honey

  • A warm evening and no agenda

There’s no wrong way to enjoy them—especially outside, after a long summer day on the farm.
